It's the most wonderful time of the year! These Chocolate Chip Christmas Tree Cookie Bars are SO much fun to make! They are the perfect way to bring in the holiday season in both a creative and delicious way. These cookie bars are the perfect texture for both crafting and eating. They are full of chocolate chips, brown sugar, and butter which make these treats perfect for the holidays! In addition, they're SO easy to make. About 45 minutes of prepping and baking and you've got these yummy bars fresh out of the oven!

What is it about this time of the year that we all love? Is it the lights? The christmas carols? The decorations? ... Hmm or maybe the baking treats?! I think it's the latter. Who doesn't love festive baked goods? For me, this time of year reminds me of going into the basement with my Mom and sister and pulling out all of the christmas decorations. My Dad would pull out his record player and put on the Temptation Christmas Album and we'd all sing, decorate the house, and bake cookies! The house would smell of pine and warm spices and buttery cookies and it was just heavenly.

Although Christmas will look a lot different this year, I will cherish these memories FOREVER. My husband and I have begun our own traditions in the almost 7 years that we've been together. (I can't believe it's been this long, insane) Since our first year of dating, we've ALWAYS gotten a real christmas tree and decorated it together. Every year we struggle with putting the tree on the top of the car, driving it home, and tracking pine needles all throughout the house. It's such a pain but it's SO much fun. One year, we even went to a tree lot and cut the tree down ourselves... translation, he cut the tree down and I watched. It was fun. lol

So these bars are SUPER easy to make. It's a two bowl recipe where you mix dry ingredients in one bowl and wet ingredients in another and then combine the two. I used a 9x13 pan to spread the cookie dough. This recipe is pretty similar to my Three Chocolate Chip Skillet Cookie recipe but with minor differences to make this cookie more sturdy and able to decorate. Once the cookie it baked, allow it to cool and then freeze it for about 20-30 minutes to ensure the cookie is fully set. Then, it's time to decorate!

step one: cut out christmas tree shapes

Start by removing the cookie bar from the 9x13 pan and add to a flat surface. Using a christmas tree cookie dough cutter, cut shapes into the cookie bar.

step two: use royal icing to create christmas tree base

I used Wilton's green decorating icing to create the christmas tree base. You can purchase this at any Joann Fabric store! Simply create squiggly lines on each tier of the christmas tree (check out the video underneath the recipe for specifics)! It doesn't have to be perfect because it'll look awesome either way!

step three: decorate!

I used Pearl Sprinkles for the ornaments and then got creative with the icing to add some garland to the christmas tree cookies! Feel free to get as creative as you'd like, it's so much fun!

Ingredients

  • 2 sticks salted butter, room temperature
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 ½ cup All-Purpose Flour
  • 1 ½ tsp Baking Soda
  • ½ tsp Kosher Salt
  • 1 tsp Corn Starch
  • 2 cups semi-sweet chocolate chips

Directions

  • Preheat Oven to 350 degrees F.
  • Add butter to a stand mixer with paddle attachment and beat for 3-4 minutes. Add brown sugar and golden sugar and continue to mix until there are no clumps, scraping down the sides of the bowl as needed. Add eggs and vanilla extract and mix for another minute.
  • In a separate bowl, whisk together flour, baking soda, salt, and corn starch. Add to wet ingredients and mix for about 30 seconds, scrape down sides of bowl if needed to make sure that everything is combined.
  • Add chocolate chips and mix in with a spatula. Smooth batter into a 9x13 baking sheet and bake for 25-30 minutes. Allow to cool completely and then freeze for 20-30 minutes to ensure that the cookie
  • Use a Christmas tree cookie cutter to cut shapes into cookies. Decorate as you'd like!
