I made these lovely cocktails last weekend and they were a hit! They consist of lavender syrup, gin, Prosecco, and mint, for garnish.
If you do not have lavender syrup, it's very simple to make. Simply boil water and dried lavender, then add sugar and simmer for 20 minutes. The mixture will thicken as it cools and turn into a fragrant lavender syrup that you can use in a multitude of recipes! I purchased dried lavender on amazon (shorturl.at/wJRX0) and used this recipe for the lavender syrup: https://www.thespruceeats.com/diy-lavender-simple-syrup-760293. I store the lavender syrup in a mason jar for future use and find that it keeps for about a month. After a month, it begins to crystallize and become hardened.
I plan on making these again tomorrow for friends at a little gathering. My girlfriend is coming over and our Hubbys will be cooking dinner for us while we sip on these lovely drinks and chat about life. I am SO looking forward to this because we have so much lost time to catch up on! I pray that they make us something good, we have no idea what's on the menu, so pray! I'm just kidding, both of them know their way around the kitchen so I'm not concerned at all. With Covid-19, how is everyone feeling about small social gatherings?
